Wash well and chop the apple into small cubes. Heat a pan with the apple over low heat and add the cinnamon and water.
Stir for about 5 minutes, until the apple softens. Reserve.
In a blender, mix vegetable milk with coconut oil, yogurt, flour, egg, yeast and salt. Let the dough rest in the refrigerator for 10 minutes. Heat a small skillet and over low heat pour the dough over it, covering the entire bottom of the skillet. Cover and wait for the top to cook to turn the disc and bake the other side. Repeat this process until the dough runs out. Serve the pancakes with the apple preparation.
