HEALTHY RICE COOKIE

Ingredients

  • 1 cup of cooked whole-grain rice
  • 2 c.s. of buffalo curd
  • 2 c.s. of tomato passata (we buy ready-made, the only ingredient is tomatoes)
  • 1 c.s. zero ketchup
  • Chopped basil leaves
  • Salt to taste

Method of preparation

Preheat the oven to 200ÂșC. Mix all ingredients in a bowl. The mixture should be very consistent (if it becomes soft, add more rice gradually).

Cover a tray with aluminum foil and grease it with a little olive oil.

Make balls and distribute on the board.

Bake for 15 minutes.
